Piptravelnews.co.za writer visits Clico
Frances Beasley, who has documented her international travels on www.piptravelnews.co.za for many years, recently visited Clico and had only good things to report. Clico Dining – recipe for you
Chef Sean Ackermann gets plenty of requests for recipes for his delectable cuisine. The current favourite is his Cajun kingklip on fruit salsa:
- Kingklip
Pan-fry a 220g, lightly scored kingklip fillet dusted with Cajun spices, for 3 minutes, or until golden-brown, with scored side down. Place on lightly greased oven pan and set aside. Pre-heat oven to 180°C. Bake kingklip for 12 to 15 minutes, depending on thickness, while you attend to the rest of the recipe.
- Fruit salsa
Finely chop small portions of cucumber, tomato, red pepper, yellow pepper, pineapple and pawpaw. Add salt, pepper, finely-chopped coriander and lemon juice and mix into the salsa. Refrigerate for two hours prior to serving.
- Lightly curried sauce
To saucepan, add 250ml cream, 2tsp medium-hot curry powder, 2tsp sugar and 2tsp chicken stock. Reduce until thick; about 15 minutes.
- To serve

Spoon enough salsa into a round tian (shallow earthenware casserole) to make a 4cm stack; lightly drizzle the prepared and warmed curry sauce around the salsa stack. Gently place the baked kingklip on the salsa stack and garnish with fresh coriander.

Clico proprietor Jeanette Schwegman’s passion for art is reflected in the chic boutique establishment, where sculptor Audrey Rudnick’s works are on display. “Supporting local art is important and Audrey Rudnick is exceptional; when selecting art for Clico, I was particularly taken by her palm sculptures, now proudly displayed in Clico’s reception area, of which photographs can also be viewed on Frances Beasley’s www.piptravelnews.co.za website,” she says.
